August is the peak season for eggplants, when they are at their juiciest. When paired with cheese and baked, the vegetable's flesh turns creamy while the melted cheese creates a dense, golden crust.
Step 1. Slice the eggplants into rounds and bake them in the oven until soft. Pre-baking is necessary to ensure the vegetables are fully cooked before adding the toppings.
Step 2. Arrange the prepared eggplant rounds in a baking dish. Top them with sliced tomatoes, which provide moisture and a slight acidity during heating.
Step 3. Sprinkle grated cheese over the dish. Return the form to the oven for a few minutes until the cheese melts and begins to brown.
