Haddock is a lean fish that easily becomes dry if overcooked or improperly prepared. To maintain moisture, this method uses an onion base and a thick sour cream sauce, creating a protective barrier that keeps the fillets juicy during baking.
Cooking time: 35 minutes
Step 1. Thaw the haddock and rinse it. Thoroughly pat the fish dry with paper towels to ensure it bakes rather than steams.
Step 2. Cut the fish into portion-sized pieces. Rub them with salt, black pepper, and spices, then let them rest for 30 minutes so the seasonings penetrate the fibers.

Step 3. Grease a baking dish with vegetable oil. Slice the onions into rings and arrange them on the bottom to create a cushion that prevents sticking and adds flavor.
Step 4. Place the fish pieces on top of the onion layer. Bake in a preheated oven at 180°C (356°F) for 20 minutes.
Step 5. Prepare the sauce by mixing sour cream, mayonnaise, and flour until smooth and free of lumps. The flour acts as a thickener to bind the fats and moisture, forming a coating that seals juices inside the fish.
Step 6. Pour the sauce over the fish and return the dish to the oven for another 10 minutes.
Step 7. Sprinkle the grated hard cheese evenly over the top during the final 5 minutes of baking to create a golden crust.
Step 8. After turning off the heat, let the dish rest in the form for 5 minutes to allow the juices to redistribute evenly.
