Cooking time: 40 minutes
Step 1. Cut the zucchini lengthwise. Use a tablespoon to remove the center pulp, leaving the walls thick enough to ensure the boats hold their shape during baking.
Step 2. Finely chop the removed zucchini pulp. Set it aside for the filling.
Step 3. Sauté onions until they reach a light golden hue. Add the chicken minced meat and cook.
Step 4. Incorporate the chopped zucchini pulp, mushrooms, and tomatoes into the meat mixture. Mix until the components are combined.
Step 5. Grease a baking dish with oil. Fill each zucchini boat tightly with the meat and vegetable stuffing.
Step 6. Sprinkle the top of each boat with shredded hard cheese.
Step 7. Bake at 160°C (320°F) for 20 minutes.
Step 8. Increase the temperature to 200°C (392°F) with the convection mode enabled to brown the cheese crust.
